Hotels start from about 50 euros per night, but that will be pretty basic - possibly even unacceptable to you, depending on your need to be centrally placed and what you expect from a hotel. From about 75-100 euros per night things are much better! Meals likewise - you will be able to find restaurants with fixed price menus for about 15-20 euros, but you will (usually) prefer the restaurants that cost 25-30 euros.
I visited in May and there were some crowds but not too bad - I would suggest May, June or September for almost guaranteed nice weather and less crowding.
